Modica chocolate pancakes

    Delicious, crumbly Modica chocolate from Sicily makes an exquisite, rich sauce perfect for pouring over these chocolate pancakes.

    Serves: 4 

    • 250g self-raising flour
    • 1 tablespoon caster sugar
    • 60g cocoa powder
    • 2 eggs, lightly beaten
    • 360ml milk
    • 1 knob butter
    • 100g Modica chocolate

    1. In a bowl, combine the flour, sugar and cocoa powder.
    2. Gradually whisk in the eggs and the milk. Mix until a thick, smooth batter forms.
    3. Heat a frying pan over a medium heat and brush with some melted butter.
    4. Add 4 tablespoons batter for each pancake. When bubbles form on the top, flip the pancake over to cook the other side.
    5. Stack the pancakes and keep them in a warm place while you cook the rest of the batter.
    6. Prepare the chocolate sauce by melting the chocolate in a pan and adding a little milk to it until it becomes nice and smooth and runny. Pour over your stack of pancakes and enjoy.
