Easy chicken slow cooker casserole

    This dish depends on how much time you have. If you want it a little neater then spend time peeling and chopping the veg into even sizes. But you can also peel only what I have to and roughly chop all the veg and stick it in the bottom of the slow cooker.

    Serves: 4 

    • 3 to 4 carrots, roughly chopped
    • 2 parsnips, roughly chopped
    • 1 swede, roughly chopped
    • sliced cabbage, broccoli stalks or other leftover veg
    • 300ml chicken broth from a tin or 1 cube mixed with 300ml water
    • 1 large leek or onion, roughly chopped
    • 2 to 3 cloves garlic, peeled and roughly chopped
    • 1 whole chicken
    • salt and pepper
    • 200g rice or lentils

    1. Place the veg in the slow cooker. Add the stock and enough water so there is 3 to 5cm water at the bottom. I usually rinse the tin out by filling it with water and adding that. You can add more if you wish, it depends on how liquid you want your casserole to be.
    2. Place the chicken on top of all the veg, onions and garlic. Add salt and pepper to taste.
    3. Cook for at least 6 hours on low. The meat should fall off the bone. You can leave it for longer if you want.
    4. Remove the chicken and take off all the meat. Pop the rice or lentils in and set your slow cooker to high. Cook until the rice or lentils are soft. Check for liquid and add more water if necessary.
    5. You can either have this as a casserole or soup. For soup blend to the desired consistency. Place the chicken back in and stir. Dish up with warm bread.


    You could leave out the rice or lentils and just serve with a potato side dish of your choosing.
