Orange and walnut muffins

    Fresh orange and walnuts make a lovely flavour combination in these muffins. This recipe is dairy free and I've tried to boost the fibre by adding wholemeal flour and flaxseed.

    Ingredients
    Serves: 12 

    • 125g plain flour
    • 150g wholemeal flour
    • 30g milled flaxseed
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 240ml fresh orange juice
    • 2 egg whites
    • 80ml almond milk
    • 3 tablespoons brown sugar
    • 2 tablespoons honey
    • 60g chopped walnuts

    Method
    Prep:15min  ›  Cook:15min  ›  Extra time:10min cooling  ›  Ready in:40min 

    1. Preheat oven to 190 C / Gas 5. Grease a 12-hole muffin tin or line with paper cases.
    2. Mix plain flour, wholemeal flour, flaxseed, bicarbonate of soda and salt together in a small bowl.
    3. Beat orange juice, egg whites, almond milk, brown sugar and honey together in a large bowl until smooth. Stir flour mixture into the orange juice mixture just until the dry ingredients are moistened completely. Fold walnuts into the mixtutre. Spoon muffin mix into the prepared tin or paper cases.
    4. Bake in preheated oven until lightly browned and a skewer inserted into the centre of a muffin comes out clean, 15 to 20 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

    Fantastic recipe. I made some substitutions to make this real-food friendly: I used 100& whole wheat flour, fresh squeezed orange juice, 2 whole eggs, subbed organic sunflower oil for the almond milk and left out the brown sugar. I added the zest of 1 orange. Very good. Plenty sweet without the extra sugar.
