Slow cooker pineapple chicken

    This slow cooker recipe delivers sweet and sour chicken thighs and pineapple using ketchup, brown sugar and garlic.

    • 125g plain flour, or as needed
    • 4 chicken thighs, trimmed
    • 250g pineapple chunks
    • 180ml pineapple juice
    • 120ml soy sauce
    • 75g brown sugar
    • 2 tablespoons ketchup
    • 1 clove garlic, minced

    1. Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
    2. Arrange chicken thighs in the bottom of your slow cooker; top with pineapple chunks.
    3. Whisk pineapple juice, soy sauce, brown sugar, ketchup and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.
    4. Cook on Low for 4 hours.

    This recipe was delicious! The chicken was so moist and fell right off the bone. I didn’t make any changes to the recipe and the chicken had a nice flavor with the sauce poured on top.
