Taco pizza

    We love tacos so I came up with this variation of it that my family loves! Beef mince, refried beans, salsa, tomatoes and fresh coriander replaces traditional Italian ingredients to deliver a Mexican-themed option for pizza night!

    Serves: 8 

    • 225g beef mince
    • 1/2 onion, finely chopped
    • 1 clove garlic
    • 1/2 packet taco seasoning mix
    • 5 tablespoons water
    • 1 (400g) tin chopped tomatoes with garlic
    • 250g salsa
    • 2 tablespoons chopped fresh coriander
    • 250g refried beans
    • 1 (30cm) prepared pizza base
    • 350g grated four cheese blend
    • 100g thinly sliced lettuce
    • 2 tomatoes, chopped
    • 60g sliced black olives
    • 25g thinly sliced spring onion
    • 120g grated Cheddar with chilli peppers (such as Mexicana┬«)
    • 225g soured cream, or as desired
    • 225g salsa, or as desired

    1. Cook and stir the beef mince, onion and garlic together in a large pan over medium-high heat until the beef is completely browned.
    2. Stir the taco seasoning mix and water into the mince mixture; bring to the boil, reduce heat to medium-low and simmer, stirring occasionally, for 5 minutes.
    3. Preheat an oven to 180 C / Gas 4.
    4. Place the prepared pizza base on a baking tray.
    5. Blend the chopped tomatoes with garlic and onion, salsa and coriander in a blender until smooth.
    6. Spread the refried beans in an even layer on the prepared pizza base, leaving a border of about 1cm uncovered around the outside.
    7. Spread some of the tomato mixture over the refried beans in an even layer; reserve the remaining sauce.
    8. Scatter the beef mixture over the layer of sauce.
    9. Cover the beef with grated cheese.
    10. Bake in the preheated oven until the cheese is bubbly and the edges of the pizza are golden brown, 15 to 20 minutes; set aside to cool 5 minutes.
    11. Top the pizza with sliced lettuce, chopped tomatoes, black olives, spring onions and grated spicy Cheddar cheese. Serve with the reserved tomato sauce, soured cream salsa.


    For a crispier pizza base, bake the pizza directly on the oven rack.
