Apricot and sultana loaf

    This loaf cake with sultanas and tinned apricots is light and very moist.

    Makes: 1 loaf cake

    • 115g butter
    • 115g caster sugar
    • 2 eggs, lightly beaten
    • 200g (7 oz) self raising flour
    • 1 level teaspoon baking powder
    • 1 pinch cinnamon
    • 140g sultanas
    • 1 (410g) tin apricots, drained

    1. Preheat the oven to 170 C / 150 C fan / Gas 3. Grease a loaf tin.
    2. Cream butter and sugar then gradually add eggs. Mix in sifted flour, baking powder and cinnamon.
    3. Lightly dust the sultanas with flour. Crush the apricots. Fold both into the mixture. Tip into the loaf tin.
    4. Bake until golden and firm, about 1.5 hours.
    5. Place on cooling rack to cool.
