Cherry almond porridge

    Oats are cooked with almond milk and dried cherries in the microwave to make this family pleasing porridge!

    Ingredients
    Serves: 4 

    • 160g porridge oats
    • 825ml vanilla almond milk
    • 1/8 teaspoon salt
    • 60g dried cherries

    Method
    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Stir together oats, almond milk and salt in a large microwave-safe bowl. Microwave on High for 5 to 6 minutes, stirring every 2 minutes, until oats are soft and most of the liquid has been absorbed. Stir in dried cherries.
    2. Spoon into bowls and serve while hot.

    I loved this recipe. The cherry and almond combination really kicked the boring old oatmeal up several notches. I don't use soy milk though, so used 1% cow's milk with a few drops of almond extract and a few tsps of brown sugar (for 4 servings) to replace the sweetened vanilla almond soy milk.     I'm the submitter of the recipe. My husband recently requested this oatmeal made with chocolate almond milk, and he likes this even more than the vanilla.
