Eggs and bacon baked in muffin tin

    You can bake your eggs and bacon for breakfast in a muffin tin. If using a silicone tray, it's even faster. And you don't need to add bacon with the eggs, you can also just bake them plain, just make sure your tin is well greased.

    Serves: 6 

    • 1 drizzle oil
    • 6 eggs
    • 1 dash milk
    • salt and pepper
    • 12 to 18 slices bacon
    • minced fresh herbs (optional)

    1. Preheat oven to 180 C / Gas 4. Grease a muffin tin with oil.
    2. Line each hole with bacon slices so they overlap and the hole is completely covered on all sides.
    3. Whisk eggs in a bowl with milk, salt and pepper. Add herbs if desired.
    4. Bake in the preheated oven until the eggs have set, about 10 to 12 minutes. Let cool for a minute or so, then gently turn out and serve.
