    These delightful and easy flower shaped cupcakes are a lovely idea for birthdays, Mother's Day and Easter.

    Ingredients
    Makes: 8 cupcakes

    • For the cupcakes
    • 90g butter, softened
    • 80g caster sugar
    • 1 teaspoon vanilla sugar
    • 2 small eggs
    • 1 teaspoon vanilla extract
    • 90g plain flour
    • 1 teaspoon baking powder
    • 1 pinch salt
    • For the icing
    • 50g butter
    • 1/2 teaspoon vanilla extract
    • 50g cream cheese
    • 125g icing sugar, as needed
    • For the decoration
    • 8 marshmallows
    • coloured sugar sprinkles
    • 8 chocolate buttons

    Method

    1. Preheat oven to 180 C / Gas 4. Line a muffin tray with 8 paper cases.
    2. Cream the butter, sugar and vanilla sugar with an electric mixer. Beat in eggs one at a time, then add vanilla extract and beat until smooth.
    3. While beating, gradually add the flour, baking powder and salt. Beat for 5 minutes, then pour the mixture into the cups.
    4. Bake until a skewer comes out clean, about 14 minutes. Allow to cool on a wire rack for 30 minutes.
    5. For the icing: Mix together the butter, vanilla extract and cream cheese; gradually beat in the icing sugar.
    6. Cut each marshmallow into 5 equal slices and press one side of each in the coloured sugar.
    7. Spread the icing over the top of each cupcake, then arrange 5 marshmallow slices on each to make a flower. Place a chocolate button in the middle.
