Bunny sandwich

    To counter all the sweets our children eat during Easter I make them this cute sandwich.

    Makes: 1 small sandwich

    • 1 slice wholemeal bread (or one large round salted cracker)
    • 1 small carrot
    • houmous or cream cheese
    • 1 slice Cheddar cheese or other firm cheese
    • fresh sprouts (alfalfa, clover etc.)

    1. Cut out a large circle out of the bread using a glass or a round biscuit cutter.
    2. Peel the carrot, Cut out two large pointy triangles for the ears and cut a thin slice for the nose. Julienne the rest for the bunny whiskers. Attach to the bread with a dab of houmous or cream cheese.
    3. Cut out small circles of cheese for the eye. Attach with houmous or cream cheese. Add a dab of houmous or cream cheese for the pupils.
    4. Decorate with sprouts and serve.
