Mini chocolate chip pancakes

    This is my favourite pancake recipe that I make for a weekend brunch or sometimes serve warm with vanilla ice cream for dessert! They are soft, fluffy and very easy to make. You can use frozen blueberries that have been thawed instead of chocolate chips. I often double this recipe because they go quickly!

    • 125g plain flour
    • 2 tablespoons caster sugar
    • 1 tablespoon baking powder
    • 1/4 teaspoon salt
    • 1 egg
    • 225ml milk, or as needed
    • 2 tablespoons butter, melted and cooled
    • 75g mini chocolate chips, or more to taste

    1. Sift flour, sugar, baking powder and salt together in a bowl. Beat egg into milk in a separate bowl until thoroughly combined. Pour melted butter into flour mixture; whisk in milk mixture to make a smooth pancake batter. Fold chocolate chips into pancake batter.
    2. Heat a small non-stick pan over low heat; pour a ladle of batter into the hot pan and cover with a lid. Cook pancake until browned on the bottom, about 3 minutes; flip pancake and cook covered until other side is browned. Repeat with remaining pancake batter.

    I cut the milk back by a quarter cup and soured the milk with a little lemon juice. I also cut the baking powder back to a teaspoon and a half (I did not want the prominent flavor of these pancakes to be baking powder). The pancakes turned out light and fluffy.
