Banana chocolate chip pancakes

    Bananas and chocolate chips are folded into pancake batter creating a sweet breakfast treat for the weekend!

    Serves: 4 

    • 250g self-raising flour
    • 300ml milk, or more as needed
    • 2 tablespoons caster sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 banana, chopped
    • 85g mini dark chocolate chips

    1. Stir flour, milk, sugar, egg and vanilla extract together in a bowl until batter is smooth; fold in banana and chocolate chips until just combined.
    2. Heat a non-stick pan over medium-high heat. Sprinkle a few drops water in pan; they will dance and disappear when pan is at right temperature.
    3. Spoon just under a ladle of pancake batter into the pan; cook until bubbles appear on the top of each pancake and bottom is golden brown, 3 to 4 minutes. Flip each pancake and cook until bottom is golden brown, 3 to 4 minutes. Repeat with remaining pancake batter.
