Gluten free waffles

    These gluten free waffles made with rice flour are absolutely delicious and very quick and easy to make!

    Ingredients
    Serves: 6 

    • 160g rice flour
    • 1 tablespoon baking powder
    • 1 pinch salt
    • 240ml milk
    • 2 eggs
    • 1 tablespoon light olive oil
    • 1 teaspoon vanilla extract

    Method

    1. Preheat a waffle iron according to manufacturer's instructions.
    2. Mix rice flour, baking powder and salt together in a bowl.
    3. Whisk milk, eggs, olive oil and vanilla extract together in a separate bowl; add to rice flour mixture and whisk until no lumps remain. Let sit for 1 to 2 minutes.
    4. Pour waffle batter into waffle iron, working in batches and cook according to manufacturer's instructions.
