Breakfast pitta bread pizza

    Round pitta breads are topped with pesto, scrambled eggs, crispy bacon, mushrooms and fresh spinach in these hearty breakfast or brunch pizzas.

    Serves: 2 

    • 4 slices bacon
    • 1/4 onion, chopped
    • 2 tablespoons extra-virgin olive oil
    • 4 eggs, beaten
    • 2 tablespoons pesto
    • 2 pitta breads
    • 1/2 tomato, chopped
    • 20g chopped fresh mushrooms
    • 20g chopped spinach leaves
    • 60g grated Cheddar cheese
    • 1 avocado - peeled, pitted and sliced

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Place bacon in a large pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on kitchen roll. Cook and stir onion in the same pan until softened, about 5 minutes. Remove and set aside. Heat olive oil in the pan. Pour in eggs and cook, stirring occasionally, until set, 3 to 5 minutes.
    3. Place pitta bread on lined baking tray. Spread pesto over pitta breads; top with bacon, scrambled eggs, tomato, mushrooms and spinach. Sprinkle Cheddar cheese over toppings.
    4. Bake in the preheated oven until cheese has melted, about 10 minutes. Serve garnished with avocado slices.

    LOVED this!!!!! I didn't have all the veggies that it called for on hand, so I just used what I did have (which wasn't much, lol), and it turned out delicious!
