Instant Pot® coconut milk yogurt

    This creamy and silky vegan homemade coconut yogurt is irresistible and so easy to make in your Instant Pot®. It's totally mess free!

    Serves: 4 

    • 2 (400g) tins coconut milk
    • 2 (8g) sachets pectin powder
    • 2 tablespoons soya yogurt or other non dairy yogurt

    1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select the Yogurt function. Pour in coconut milk and sprinkle with pectin powder; mix until well dissolved. Stir in soya yogurt. Close and lock the lid. Set timer for 24 hours.
    2. Unlock and remove lid. Stir yogurt well and transfer to sterilised jars; seal with tight-fitting lids. Chill in the fridge for at least 6 hours.
