Nasturtium flower vinegar

    Nasturtium flowers make a wonderful peppery vinegar. Make sure you only use flowers that have not been sprayed with any chemicals or pesticides. It is difficult to give an amount for how many flowers you need; just pick enough to loosely pack your jar.

    Makes: 1 Glas

    • 1 jar of loosely packed untreated fresh nasturtium flowers
    • 500ml distilled white vinegar (5% acidity)
    • 1 teaspoon black peppercorns, crushed

    1. Sterilise a 500ml jar. Pick as many flowers as will fit in the jar, wash them under cold water and dry them well in a salad spinner. Add peppercorns and vinegar to fill the jar.
    2. Close with a lid and leave to sit for 4 weeks in a sunny location. Give the jar a shake every now and then.
    3. Strain through a fine sieve into a sterilised bottle and seal. Store in a dark place so the vinegar maintains its colour. Use within 1 year.

    Use flowers that are preferably red or other vibrant colours.
