Cucumber salad with borage flowers

    Borage is a lovely garden plant and both the leaves and the flowers are edible. I like to add them to this simple cucumber salad.

    Serves: 4 

    • 1 cucumber
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoons lime juice
    • salt
    • pepper
    • 6 fresh borage leaves, minced
    • 12 fresh borage flowers

    1. Wash the cucumber and cut in half. No need to peel if you are using organic. Scrape out seeds if desired and slice thinly but not paper thin.
    2. In a bowl stir lime juice with oil, salt and pepper and add cucumber slices. Mix well, cover and chill for 1 hour.
    3. Just before serving, add minced borage leaves and flowers. The wilt quickly so don't add them before you are ready to serve.
