Wild garlic and sorrel dip

    In the spring I have so much to do in the garden that cooking must be speedy and easy. This is a super quick dip with the first spring herbs.

    Serves: 4 

    • 1 handful young tender sorrel leaves
    • 150g quark
    • 1 teaspoon milk, or as needed
    • 1 tablespoon finely chopped chives
    • 1 tablespoon finely chopped wild garlic leaves
    • salt and pepper

    1. Remove the stems from the sorrel leaves. Rinse, dry well and mince.
    2. Stir the quark till creamy, adding just a little milk to soften. Stir in sorrel and herbs and season with salt and pepper. Serve immediately or chill until serving.
