Strawberries with whipped rhubarb cream

    Simple and different from your standard rhubarb dessert - sliced strawberries topped with rhubarb-flavoured whipped cream. If you have some rhubarb compote left over, you can use it for the whipped cream instead of making a small amount for this recipe.

    Serves: 4 

    • 500g strawberries, hulled
    • 3 tablespoons caster sugar
    • 100g rhubarb
    • 1 pinch lemon zest
    • 200g double cream

    1. Slice strawberries and add to a bowl with 2 tablespoons sugar. Set to the side for a few minutes to allow them to draw some juice.
    2. Slice the rhubarb and add to a small saucepan with 2 tablespoons water, 1 tablespoon sugar and lemon zest. Bring to the boil and cook until soft, about 3 minutes. Puree while still hot and set to the side to cool.
    3. Whip the cream and fold in rhubarb puree. Spoon rhubarb whipped cream over sliced strawberries and serve.
