Rhubarb apple crumble

    A lovely combination of cooking apples and rhubarb with a oat crumble topping. Delicious!

    Serves: 6 

    • 750g cooking apples, peeled and quartered, core removed and diced
    • 750g trimmed rhubarb, diced
    • 3 tablespoons plain flour
    • 200g caster sugar
    • 1 level teaspoon cinnamon
    • For the crumble topping
    • 90g cold butter, diced
    • 175g soft light brown sugar
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 8 tablespoons rolled oats

    1. Preheat oven to 190 C / Gas 5.
    2. Add diced apple and rhubarb into a bowl with 3 tablespoons flour, 200g caster sugar and cinnamon. Spread in an ovenproof dish.
    3. Add the diced cold butter to a bowl with flour, brown sugar, salt, nutmeg and oats. Use your fingertips to rub it into a crumb-like consistency; spread on the rhubarb apple mixture.
    4. Bake until bubbling and golden on top, about 1 hour. Serve warm.
