Sandwich with Mexican tofu spread and grilled courgette

    Sandwich filled with grilled courgette and tofu spread with a Mexican flavour.

    • 1 courgette
    • olive oil
    • salt
    • 1/2 (75g) tub ready made Mexican tofu spread
    • 1 large sandwich roll (Ciabatta roll)
    • minced herbs, chilli flakes or minced chives (optional)

    1. Preheat grill or frying pan to hot.
    2. Slice courgette into thin slices. Brush one side of each slice with a little oil.
    3. Lay the courgette slices, oil side down, on the hot pan. Cook until soft and browned, about 2 minutes on each side. Sprinkle with salt.
    4. Slice the bread, spread with tofu spread, and layer the courgette slices on top.
    5. Add herbs, chilli flakes or chives and top with other slice or leave open.
