Mediterranean fried rice

    Fried rice takes on a Mediterranean theme when cooked with garlic, artichoke hearts, red pepper, spinach and feta!

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 clove garlic, minced
    • 225g cooked rice
    • 275g frozen chopped spinach, thawed and drained
    • 170g marinated artichoke hearts, drained and quartered
    • 120g roasted red peppers, drained and chopped
    • 75g crumbled feta cheese

    1. Heat olive oil in a pan over medium heat; cook and stir garlic in the hot oil until fragrant and beginning to brown, about 2 minutes. Stir in rice; cook until rice is hot and grains are separate, stirring often, 2 more minutes. Add spinach and cook until heated through, 3 more minutes.
    2. Stir artichoke hearts and roasted red peppers into rice mixture and cook 2 minutes; mix in feta cheese, remove from heat and serve immediately.
