Fried rice takes on a Mediterranean theme when cooked with garlic, artichoke hearts, red pepper, spinach and feta!

2 tablespoons olive oil
1 clove garlic, minced
225g cooked rice
275g frozen chopped spinach, thawed and drained
170g marinated artichoke hearts, drained and quartered
120g roasted red peppers, drained and chopped
75g crumbled feta cheese

Heat olive oil in a pan over medium heat; cook and stir garlic in the hot oil until fragrant and beginning to brown, about 2 minutes. Stir in rice; cook until rice is hot and grains are separate, stirring often, 2 more minutes. Add spinach and cook until heated through, 3 more minutes.
Stir artichoke hearts and roasted red peppers into rice mixture and cook 2 minutes; mix in feta cheese, remove from heat and serve immediately.
