Brown rice pilaf with onions and sweetcorn

    Brown rice, sweetcorn and onions are simmered in chicken stock to make a pilaf that is a quick and easy side dish for any meal.

    • 1 tablespoon olive oil
    • 100g sweetcorn kernels (if frozen, thawed)
    • 1/2 onion, chopped
    • 100g brown rice
    • 300ml chicken stock

    1. Heat olive oil in a small saucepan over medium heat. Add sweetcorn and onion; cook and stir until lightly browned, 5 to 7 minutes. Add rice and stir to coat with oil. Add chicken stock and bring to the boil. Cover and reduce heat to low. Cook until rice is tender, about 45 minutes.
