Lucy's toad in the hole

    Serves: 2 

    • 2 tablespoons butter
    • 450g pork sausages
    • 125g plain flour
    • 1 beaten egg
    • 250ml milk

    Prep:15min  ›  Cook:45min  ›  Extra time:1hr chilling  ›  Ready in:2hr 

    1. Preheat oven to 200 C / Gas 6.
    2. Place the butter and sausages in a baking tin and place in preheated oven for 15 minutes.
    3. Meanwhile sift the flour into a bowl and beat in the egg. Add 1/2 of the milk slowly beating until the mixture is smooth. Add the rest of the milk and beat until very smooth.
    4. Pour the mixture into the tin with the sausages and bake for 20 minutes.
    5. Reduce the oven temperature to 180 C / Gas 4 and bake for an additional 10-15 minutes or until the batter rises up the sides of the tin and turns a golden brown colour.

    This was the first time I've made toad in the hole and my family really loved it! It was easy to make and wasn't too fussy after a day at work.Will definitely be making it again!  -  10 Sep 2012


    Sorry, but I have to give this a thumbs down I'm not a beginner at Toad in the Hole (or batters for that matter) but this came out horribly. The batter barely rose at all, and it was thick and stodgy. The butter also meant that it didn't come out cleanly. I think I will stick to my old recipe next time.  -  29 Oct 2012
