Chinese style chicken and mushrooms

    Flavorful Chinese chicken dish with vegetables in a thick honey sesame sauce.

    Serves: 4 

    • 1 tablespoon peanut oil
    • 3 chicken breasts, cut into cubes
    • 3 cloves garlic, crushed
    • 120ml low sodium soy sauce
    • 250g honey
    • 1 tablespoon sesame oil
    • 1 tablespoon sesame seeds
    • 1 onion, diced
    • 280g broccoli, broken into florets
    • 2 small peppers, thinly sliced
    • 70g mushrooms, sliced
    • 1 spring onion, chopped

    1. Heat peanut oil in a pan and cook chicken over a medium-high heat until no longer pink in the centre.
    2. Reduce heat to medium and stir in garlic.
    3. Add soy sauce, honey, sesame oil and half of the sesame seeds to the pan and stir until thickened.
    4. Remove chicken from the pan and put aside.
    5. Add onion, broccoli, peppers and mushrooms to the remaining sauce. Cover and cook until the vegetables begin to soften, stirring.
    6. Remove the lid of the pan and stir until thickened.
    7. Add the chicken back to the pan to reheat. Serve over rice topped with sesame seeds and spring onion


    Best served with egg fried rice.
