Bob's Easy Drizzle cake.

    • 125g butter
    • 175g caster sugar
    • juice and zest of 2 lemons
    • 175g self-raising flour
    • 75g icing sugar
    • 3fl oz milk
    • 2 eggs


    1. pre-heat oven to 190c /gas mark 5
    2. Lightly grease and line with greaseproof paper a 24in cake tin
    3. Mix together the butter and caster sugar until light and fluffy.
    4. Add lemon zest and eggs and beat in well.
    5. Sift in flour and fold in well to the mixture.
    6. Pour mixture into cake tin and bake for 40 to 45 min or until golden brown and skewer comes out clean.
    7. Make drizzle syrup by heating up lemon juice and icing sugar in pan and pour over cake when still warm in tin ( prick small holes in cake before adding syrup )
