Bob's easy drizzle cake

    Ingredients
    Makes: 1 cake

    • 125g butter
    • 175g caster sugar
    • 2 lemons, juiced and zested
    • 2 eggs
    • 85ml (3 oz) milk
    • 175g self-raising flour
    • 75g icing sugar

    Method

    1. Pre-heat oven to 190 C / Gas 5. Lightly grease and line an 24cm cake tin with greaseproof paper.
    2. Mix together the butter and caster sugar until light and fluffy. Add lemon zest, eggs and milk and beat in well. Sift in flour and fold in well to the mixture. Reserve the lemon juice.
    3. Pour mixture into cake tin and bake until golden brown and skewer comes out clean, 40 to 45 minutes.
    4. Make drizzle syrup by heating up lemon juice and icing sugar in pan. Stir till smooth.
    5. Prick small holes in cake then pour syrup over cake in tin when still warm.
