Baked salmon with cheesy breadcrumbs

    Salmon fillets are baked under a crispy, flavourful coating of panko breadcrumbs, Parmesan, Italian seasoning and garlic.

    Serves: 4 

    • 4 salmon fillets
    • 1 1/2 tablespoons fresh lemon juice
    • salt and ground black pepper to taste
    • 50g panko breadcrumbs
    • 20g grated Parmesan cheese
    • 1 tablespoon extra-virgin olive oil
    • 1 teaspoon Italian herb seasoning
    • 1/8 teaspoon garlic powder

    1. Preheat the oven to 220 C / Gas 7. Lightly grease a baking dish.
    2. Place salmon fillets into the baking dish and sprinkle evenly with lemon juice. Season with salt and pepper.
    3. Combine panko breadcrumbs, Parmesan cheese, olive oil, Italian seasoning and garlic powder in a bowl. Sprinkle mixture evenly over the salmon.
    4. Bake in the preheated oven until topping is lightly browned and salmon flakes easily with a fork, 15 to 20 minutes.
