- 4 salmon fillets
- 1 1/2 tablespoons fresh lemon juice
- salt and ground black pepper to taste
- 50g panko breadcrumbs
- 20g grated Parmesan cheese
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Italian herb seasoning
- 1/8 teaspoon garlic powder

- Preheat the oven to 220 C / Gas 7. Lightly grease a baking dish.
- Place salmon fillets into the baking dish and sprinkle evenly with lemon juice. Season with salt and pepper.
- Combine panko breadcrumbs, Parmesan cheese, olive oil, Italian seasoning and garlic powder in a bowl. Sprinkle mixture evenly over the salmon.
- Bake in the preheated oven until topping is lightly browned and salmon flakes easily with a fork, 15 to 20 minutes.
