This quinoa chilli is a great vegan dish that's cooked in one pot and makes enough to serve a crowd! It has two kinds of beans and is spiced up with chilli pepper and jalapenos.

1 tablespoon olive oil
1 onion, chopped
3 carrots, chopped
1 red pepper, chopped
1 jalapeno pepper, seeded and chopped
4 cloves garlic, chopped
4 (400g) tins chopped tomatoes
2 (400g) tins black beans, drained
2 (400g) tins chickpeas, drained
2 teaspoons garlic salt
2 teaspoons chilli powder
1 teaspoon ground cumin

Heat olive oil in a large saucepan over medium heat. Add onion, carrots, red pepper and jalapeno pepper. Cook and stir until tender, about 5 minutes. Add garlic and cook until fragrant, about 2 minutes. Add tomatoes, black beans, chickpeas, quinoa, garlic salt, chilli powder and cumin. Reduce heat to low and cook until quinoa is tender and chilli is heated through, 30 minutes to 1 hour.
