Delicious and so easy to prepare! A pork fillet or small boneless pork loin is coated with honey, mustard and thyme, then roasted on a bed of carrots and fennel.
Combine carrots, fennel and onion in a baking dish; season with salt and pepper.
Roast vegetables in the preheated oven for 45 minutes. Nestle the pork in the centre of the vegetables and cook until pork is cooked through, about 25 minutes. Thinly slice the pork loin and serve.
