No Bake Date Balls

These date balls make a high energy snack, perfect with an afternoon cuppa. They freeze well and keep for weeks in the fridge.

Ingredients

30g (1 oz) butter
275g (10 oz) dates, pitted and chopped
125g (4¼ oz) icing sugar
2 eggs, beaten
1/4 teaspoon salt
75g (3 oz) crisped rice cereal
50g (2 oz) chopped walnuts
1 teaspoon vanilla extract
150g (5 oz) desiccated coconut

Preparation method

1. Using a double boiler, heat butter, chopped dates, icing sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
2. Add crisp rice cereal, chopped walnuts and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.
