    Call these sweet, fruity morsels date truffles! They're a festive alternative to chocolate at Christmastime and can be made well in advance for unexpected guests. They freeze well and keep for weeks in the fridge.

    Serves: 12 

    • 30g (1 oz) butter
    • 275g (10 oz) dates, pitted and chopped
    • 125g (4¼ oz) icing sugar
    • 2 eggs, beaten
    • 1/4 teaspoon salt
    • 75g (3 oz) crisped rice cereal
    • 50g (2 oz) chopped walnuts
    • 1 teaspoon vanilla extract
    • 150g (5 oz) desiccated coconut

    1. Using a double boiler, heat butter, chopped dates, icing sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
    2. Add crisp rice cereal, chopped walnuts and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.


    Instead of coconut, you could choose to roll these in icing sugar. And if you prefer a more aromatic take on this recipe, try adding up to 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg and a pinch of ground cloves.
