Vegan chocolate chip cookies

    This small batch of vegan cookies are really quick and easy to make. Using both cocoa and chocolate chips make them taste even more chocolaty!

    Serves: 4 

    • 3 tablespoons plain flour
    • 3 tablespoons vegan chocolate chips
    • 2 tablespoons caster sugar
    • 2 tablespoons vegetable oil
    • 1 tablespoon cocoa powder
    • 1 tablespoon almond milk
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon baking powder

    1. Preheat oven to 180 C / Gas 4.
    2. Mix flour, chocolate chips, sugar, oil, cocoa powder, almond milk, vanilla extract and baking powder together in a bowl. Place dough on a flat work surface and split into 4 pieces. Flatten and mould cookies into the desired shape. Arrange cookies on a small baking tray.
    3. Bake in the preheated oven until edges are set, about 5 minutes. Cool until firm, 2 to 3 minutes.

    Absolutely delicious thank you! We all love home baked treats and these were the perfect mix of chocolate and sweetness and what I loved was they were super light and I could have ate them all just myself but I shared of course haha. I added valencia orange essence which was a nice edition as we all love chocolate Orange flavours. Just half a teaspoon along with the vanilla extract. I also used olive oil.
