    Peanut and oat cereal bars with no refined sugar - they are sweetened with bananas, carrots and apples.

    Ingredients
    Serves: 12 

    • 160g oats
    • 2 bananas, mashed
    • 2 carrots, grated
    • 1 apple, grated
    • 225g unsweetened apple sauce
    • 75g chopped peanuts

    Method
    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 180 C / Gas 4. Grease a traybake tin or baking dish.
    2. Mix oats, bananas, carrots, apple, apple sauce and chopped peanuts together in a bowl; spread into the prepared baking dish.
    3. Bake in the preheated oven until golden brown, about 20 minutes. Slice into bars.

    Maybe I used too much carrot since mine were a little large (I used 1.5 which equaled almost 2 cups grated) but mine turned out relatively soggy. Maybe after they sit overnight they will firm up.  -  10 May 2018  (Review from Allrecipes US | Canada)

    Good recipe as is, but I had to change things to suit my taste. I added some brown sugar (and will also add honey or agave next time) to make them a tad sweeter. Also added cinnamon, nutmeg, and cloves. Switched out peanuts for walnuts. Also, my bananas were uber ripe, which did not get masked as much as it would have in banana bread, so be aware of that when you choose your recipe for overripe bananas. They were a little soft for my liking, but the flavors were very good. My husband liked them, especially since he is trying to eat healthier.  -  01 May 2018  (Review from Allrecipes US | Canada)
