5 large red apples, finely chopped
600g hulled and halved strawberries
500g finely chopped rhubarb
100g granulated sugar
4 tablespoons water
2 teaspoons vanilla extract, or to taste

Combine apples, strawberries, rhubarb, sugar and water in a large pot. Bring to the boil; cover and simmer, stirring occasionally, until apples are tender, about 20 minutes. Remove from heat and stir in vanilla extract.
