Strawberry-rhubarb apple sauce

    Strawberries add a beautiful rosy hue to this quick and easy apple sauce made with red apples, tart rhubarb and vanilla.

    • 5 large red apples, finely chopped
    • 600g hulled and halved strawberries
    • 500g finely chopped rhubarb
    • 100g granulated sugar
    • 4 tablespoons water
    • 2 teaspoons vanilla extract, or to taste

    1. Combine apples, strawberries, rhubarb, sugar and water in a large pot. Bring to the boil; cover and simmer, stirring occasionally, until apples are tender, about 20 minutes. Remove from heat and stir in vanilla extract.
