Cheese and onion puff pastry pies

    Buttery puff pastry is filled with a simple mixture of cheese, onion and parsley. Lovely as a snack or alongside a bowl of soup.

    Makes: 4 pies

    • 1 packet puff pastry, thawed if frozen
    • 15g butter
    • 2 to 3 medium onions, finely chopped
    • 225g double Gloucester or Cheddar cheese, grated
    • 4 tablespoons chopped fresh parsley
    • milk or egg, for brushing

    1. Preheat the oven to 220 C / Gas 7, or to the temperature noted on the puff pastry packet.
    2. Melt the butter in a frying pan over low heat. Add the onions and cook until just beginning to soften. Remove from heat.
    3. Combine the onions with the cheese and parsley. Mix well.
    4. Roll out the pastry and cut out four circles, each 15cm in diameter.
    5. Put a quarter of the cheese mixture on one half of each round. Fold over the other side and crimp the edges together with the tines of a fork.
    6. Lay on a floured baking sheet and brush the tops with milk or beaten egg.
    7. Bake in the preheated oven for 30 minutes, or till golden brown.
