Faux potato salad


    In this salad I basically substituted cauliflower for potatoes. Adjust the cooking time to how you like the cauliflower (it is nice if it still has some bite). The smaller the cauliflower is cut, the faster it will cook.

    • 1 whole (white) cauliflower, cut into pieces
    • 2 boiled eggs, diced
    • 1 celery stalk, diced
    • 1/2 onion, diced
    • 1/4 green pepper, diced
    • mayonnaise
    • 1 tablespoon relish
    • 1 teaspoon yellow mustard
    • salt and pepper
    • paprika for sprinkling


    1. Wash and cut cauliflower, then steam to the desired doneness. Drain and let cool.
    2. In a bowl mix cauliflower, eggs, celery, onion, and pepper. Add relish and mustard enough mayo to hold it all together and season with salt and pepper to taste.
    3. Gently mixing as if making regular potato salad. Sprinkle with paprika and serve.
