Vegan chocolate and peanut butter banana cake

    Chocolate, peanut butter, almond milk and very ripe bananas make this traybake cake irresistible! You can use any type of non dairy milk.

    • 275g wholemeal flour or plain flour
    • 150g caster sugar
    • 100g soft brown sugar
    • 65g cocoa powder
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 450g very ripe bananas, mashed
    • 130g smooth peanut butter
    • 300ml almond milk
    • 180ml grapeseed oil or light oil
    • 275g vegan dark chocolate, chopped

    Method

    1. Preheat oven to 180 C / Gas 4. Lightly grease a traybake tin.
    2. Mix flour, caster sugar, brown sugar, cocoa powder, baking powder, bicarbonate of soda and salt together in a bowl. Stir mashed bananas and peanut butter together in a separate bowl until smooth; add almond milk and oil and mix well. Carefully fold banana mixture into flour mixture until just combined; fold in chocolate chips. Pour cake mixture into the prepared tin.
    3. Bake in the preheated oven until a skewer inserted in the centre comes out clean, 40 to 45 minutes.
