Apple mango pie

    An apple pie with an unusual double fruit filling: Granny Smith apples and fresh mangoes.

    Makes: 1 pie

    • 5 to 6 Granny Smith apples, peeled, cored and sliced
    • 3 mangoes, peeled, stone removed and sliced
    • 225g light brown soft sugar
    • 5 teaspoons water
    • 3 teaspoons wholemeal wheat flour
    • 60g chopped walnuts
    • 2 (375g) packages ready rolled shortcrust pastry
    • melted butter for brushing

    1. Preheat the oven to 190 C / Gas 5.
    2. Combine sliced apples, mangoes, brown sugar and walnuts in a bowl.
    3. Mix water and wheat flour in another bowl and stir together.
    4. Place a ready made pastry in a 23cm (9 in) pie tin for the base. Spread apple and mango mixture over the base.
    5. Pour the flour and water mixture over the filling.
    6. Cut the second crust in a checker board pattern and place over the filling.
    7. Brush the top pastry with melted butter.
    8. Bake in the preheated oven until crust is golden brown and filling is bubbly, about 1 hour.
    9. Remove from oven and let cool for at least 1/2 hour before slicing.
