Crispy coconut date balls

    These little coconut covered treats are filled with dates, rice krispies and walnuts. They make a lovely sweet treat or mid-day snack!

    Makes: 24 date balls

    • 50g butter or margarine
    • 135g caster sugar
    • 1 egg, beaten
    • 225g dates, pitted and finely chopped
    • 1 teaspoon vanilla extract
    • 55g crispy rice cereal
    • 90g walnuts, finely chopped
    • 75g desiccated coconut

    1. Combine the butter or margarine, sugar, egg and dates in a saucepan. Cook over medium heat until thick, about 7 to 10 minutes. Remove from heat; stir in vanilla.
    2. Combine the crispy rice cereal and the walnuts in a large bowl. Stir in the date mixture; mix well.
    3. Working quickly, form the cereal and date mixture into 2.5cm balls. Roll balls in coconut. Store in an airtight container in a cool place. Do not keep in the fridge.


    Since dates have a lot of natural sweetness, you can try decreasing the added sugar. You can also use soft brown sugar for a more caramelised flavour.
