Gin & Tonic muffins


    Cakes for adults, easy to make and delicious. And because of the alcohol they store and last well. This recipe makes about 12 muffins, great for a girls night in

    • 6 oz butter ( room temp)
    • 6oz sugar
    • 3 large eggs
    • 6 oz self raising flour
    • 1 tsp baking powder
    • Zest of 2 limes ( juice used for the butter cream )
    • 2 tbls gin and 2 tbls tonic


    1. Pre heat oven 190 C
    2. Cream together butter and sugar till light and fluffy
    3. Add eggs 1 at a time till combined
    4. Fold in the sieved flour and baking powder and the gin & tonic and lime zest
    5. I use an ice cream scoop to spoon the mixture into muffin cases on a muffin tray but a spoon works just as well.
    6. Bake for 15 - 18 mins
    7. When cool decorate with lime flavoured butter cream ( 3 oz butter, 6 oz icing sugar and lime juice to taste)
