Low carb bread

    This delicious low carbohydrate, gluten free, keto bread couldn't be any easier to make. Made with melted butter, eggs, ground almonds and olive oil and baked until golden brown. Ideal for slicing and making toast or sandwiches.

    Serves: 12 

    • 7 eggs, at room temperature
    • 120g butter, melted and cooled
    • 2 tablespoons olive oil
    • 250g ground almonds
    • 1 teaspoon baking powder
    • 1/2 teaspoon xanthan gum
    • 1/2 teaspoon sea salt

    1. Preheat the oven to 180 C / Gas 4. Grease a 2lb silicone loaf pan.
    2. Whisk eggs in a bowl until smooth and creamy, about 3 minutes. Add melted butter and olive oil; mix until well combined.
    3. Combine ground almonds, baking powder, xanthan gum and salt in a separate bowl; mix well. Add gradually to the egg mixture, mixing well until a thick mixture is formed.
    4. Pour bread mixture into the prepared pan and smooth the top with a spatula.
    5. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 45 minutes.


    Make sure the eggs are at room temperature; this will make the bread airy and taste better.
