Air fryer cake

    This cake made in an air fryer might sound too good to be true! The trickiest bit was finding a cake tin to fit in the air fryer. I went with a ring tin, which works really well and makes it cook even quicker. Top with icing sugar.

    Serves: 4 

    • 100g butter, at room temperature
    • 75g caster sugar
    • 1 egg
    • 200g plain flour
    • 1 pinch salt, or to taste
    • 6 tablespoons milk

    1. Preheat an air fryer to 180 C. Grease a small ring cake tin or fluted tin.
    2. Beat butter and sugar together in a bowl using an electric mixer until light and creamy. Add egg and mix until smooth and fluffy. Stir in flour and salt. Add milk and mix thoroughly. Transfer cake mixture into the prepared cake tin; use the back of a spoon to level the surface.
    3. Place the tin in the air fryer basket. Set the timer for 15 minutes. Bake until a skewer inserted into the cake comes out clean.
    4. Turn cake out of tin and allow to cool, about 5 minutes.

    Cook's Note:

    If you don't have an air fryer, this recipe works well in a normal oven. Add 5 minutes to the baking time.

    The recipe calls for 1/4 c + 2 T sugar but then says "butter" with the same measurements. I figured it meant the sugar. I made it with almond milk since it was what I had on hand and added a touch of vanilla. It turned out nice and dense. Will make again.  -  21 Jan 2018  (Review from Allrecipes US | Canada)
