Sponge cake with self raising flour

    This is an easy recipe for a tasty beginner's sponge cake.

    Ingredients
    Makes: 1 cake

    • 2 teaspoons vanilla extract
    • 2 teaspoons baking powder
    • 250g self rasing flour
    • 250g butter, at room temperature
    • 250g caster sugar
    • 8 eggs

    Method
    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat your oven to 180 C / Gas 4. Grease a 23 to 25cm baking tin.
    2. Mix all the ingredients all in a large bowl and beat with an electric whisk till light and fluffy.
    3. Pour into the prepared tin and bake for 25 to 35 minutes, then reduce heat and bake at 140 C / Gas 1 for 5 more minutes.
