Mini Scotch eggs

    Ideal snack for a party. I also make them for grandkids' packed lunches.

    Serves: 8 

    • 1 (500g) pack sausage meat
    • 1 pinch salt and pepper
    • a few splashes of Worcester sauce
    • 1 tablespoon plain flour
    • 4 small hard boiled eggs, peeled
    • 1 tablespoon mayonnaise
    • bread crumbs
    • 1 egg to coat, lightly beaten
    • oil for deep frying

    1. Mix sausagemeat with salt and pepper, Worchester sauce and flour in bowl. Leave to one side.
    2. Mash eggs with mayo in another bowl. Take a small amount of sausage meat in the palm of your hand so it's flat. Put a small amount of egg mayo mix on top and roll into a ball. Coat in egg then in bread crumbs.
    3. Heat oil until hot enough to sizzle. Deep fry the Scotch eggs until browned on all sides.
