Vegan oat cookies

    Super easy vegan oat rounds.

    Serves: 12 

    • 120g vegan spread
    • 100g golden caster sugar
    • 1/2 teaspoon vanilla extract
    • 100g porridge oats
    • 140g plain flour

    Prep:15min  ›  Cook:15min  ›  Extra time:30min chilling  ›  Ready in:1hr 

    1. Cream together vegan spread and sugar in a bowl. Add vanilla extract.
    2. Fold in oats and flour mixing until mixture holds together.
    3. Wrap mixture in cling wrap or plastic bag and chill in fridge for 30 minutes.
    4. Preheat oven to 190 C / Gas 5.
    5. Remove mixture from fridge and roll out on a floured surface, using a biscuit cutter. Cut all the dough into rounds and place on baking trays.
    6. Bake till the edges are golden, 15 to 20 minutes. Wait till biscuits are cool and enjoy.
