Cajun chicken one-pot pasta

    Really tasty on-pot dinner with a Cajun twist, so quick without too much washing up! The tagliatelle are cooked in the same pot as everything else.

    Serves: 4 

    • 1 teaspoon garlic salt
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • 1 teaspoon cayenne pepper (less if you don't want it too spicy)
    • 1 teaspoon paprika
    • 1 teaspoon black pepper
    • 1 tablespoon olive oil
    • 4 boneless, skinless chicken breasts, cut into mini fillets
    • 1 tablespoon olive oil
    • 3 cloves garlic, finley chopped
    • 2 red peppers, diced
    • 1 red onion, diced
    • 960ml milk
    • 480 ml water
    • 500 g tagliatelle
    • 3 tablespoons Parmesan
    • 3 tablespoons chopped parsley

    1. In a small bowl mix together your garlic salt, thyme, oregano, cayenne pepper and black pepper.
    2. Get a large casserole pot and on a medium heat add 1 tablespoon oil, chicken and spice mix and cook until chicken is done.
    3. Transfer your chicken into a bowl, cover with foil and set aside.
    4. In the same pot that you cooked your chicken in, add 1 tablespoon oil, garlic, peppers and your onion. When your vegetables are nearly done, add the milk and only half of the water.
    5. Bring to the boil and when boiling add your tagliatelle and cook the tagliatelle according to package instructions.
    6. If most of the sauce has been absorbed but the pasta isn't done add your second cup of water. Please note that you must keep stirring, otherwise the pasta sticks to the base of the pan. Sometimes it looks like there is too much sauce, but don't worry it does get absorbed anyway.
    7. Finally add your chicken back in along with your Parmesan and parsley and stir.
    8. Serve in warmed pasta bowls, sprinkle with Parmesan and garnish with parsley


    You can use coriander instead of parsley, and can also use less Parmesan, the amount is too taste.
