Cajun Chicken One-Pot Pasta

    Really tasty one pot dinner, so quick without too much washing up! Something really special with a Cajun twist that the whole family will enjoy!

    Ingredients

    • 1 tsp Paprika
    • 1 tsp Garlic Salt
    • 1 tsp Thyme
    • 1 tsp Oregano
    • 1sp Cayene pepper (less if you don't want it too spicy)
    • 1 tsp Pepper
    • 1 tbsp Olive Oil
    • 4 Chicken Breasts chopped into mini fillets
    • 1 tbsp Olive Oil
    • 2 Red Bell peppers, diced
    • 1 Red Onion, diced
    • 3 Cloves of Garlic, finley chopped
    • 4 cups Milk
    • 2 cups Water
    • Tagliatelle for 4 people
    • 3 tbsp Parmesan
    • 3 tbsp Curled Leaf Parsley

    Method

    1. In a small bowl mix together your Garlic Salt, Thyme, Oregano, Cayenne pepper and Pepper.
    2. Get a large casserole pot and on a medium heat add a tablespoon of oil, chicken and spice mix and cook until chicken is done.
    3. Transfer your chicken into a bowl, cover with foil and set aside.
    4. In the same pot that you cooked your chicken in, add another tablespoon of oil, garlic, peppers and your onion. When your vegetables are nearly done, add the milk and only one cup of water.
    5. Bring to the boil and when boiling add your tagliatelle and cook the tagliatelle through.
    6. If most of the sauce has been absorbed but the pasta isn't done add your second cup of water. Please note that you must keep stirring, otherwise the pasta sticks to the base of the pan.
    7. Sometimes it looks like there is too much sauce, but don't worry it does get absorbed anyway!
    8. Finally add your chicken back in along with your Parmesan and parsley and stir.
    9. Serve in warmed pasta bowls, sprinkle with Parmesan and garnish with parsley
    10. Enjoy!!!

    Tip

    You can use coriander instead of parsley, you also don't have to add as much Parmesan!
