Quick ham omelette and potato dinner

    A very simple baseline recipe that with a few twists has been jazzed up into a really healthy and tasty dinner!

    Serves: 1 

    • 2 small red skinned potatoes
    • 1/4 red pepper
    • 1/4 yellow pepper
    • 1 to 2 slices lean ham
    • 1 dessertspoon vegetable oil
    • 1 egg
    • 1 pinch oregano
    • 1 pinch paprika
    • 1 small pinch turmeric
    • 2 cherry tomatoes
    • 1 knob butter
    • salt and pepper

    1. Wrap your potatoes in kitchen paper and microwave them until they you can stick a knife in them, about 5 minutes on high at 1000 watt, or depending on your microwave.
    2. Meanwhile dice your peppers and ham and fry them in oil in a pan until the peppers are softening and the ham is going crispy.
    3. Take them out of the pan, put them in a bowl and set aside.
    4. In a mug or a jug, mix your egg, oregano, paprika and turmeric and whisk together.
    5. Tip the egg mix in the pan and tilt the pan back and forth until the egg covers the base, then tip your ham and peppers on top.
    6. When the omelette is crispy underneath, carefully fold it in half with the ham and peppers inside and place your tomatoes in the pan.
    7. Lift the omelette out of the pan and place on a plate with your tomatoes and potatoes
    8. Cut a cross in your potatoes but not all the way through and place a knob of butter inside, along with some salt and pepper


    While frying your peppers and ham you could sprinkle over some paprika and also some on your tomatoes. Another spice combination that I tried was Cajun spice, I thought that this works well too.
