Super Tasty Omlette and Potato 10 Minute Dinner

    A very simple baseline recipe that with a few twists has been jazzed up into a really healthy and tasty dinner!

    • 1 egg
    • 1-2 slices of lean ham
    • 1/4 red pepper
    • 1/4 yellow pepper
    • A pinch of Oregano (good for digestion)
    • A small pinch of tumeric (good for headaches)
    • A pinch of paprika (no medicinal benifits, just for flavouring really!)
    • 1 dessert spoon vegetable oil
    • 2 small red skinned potatoes
    • 2 cherry tomatoes


    1. Wrap your potatoes in kitchen paper and microwave them for 5 mins on high (my microwave is 1000W) or until they you can stick a knife in them and shake them off.
    2. Meanwhile dice your peppers and ham and fry them in a pan you would do an omelette in, with your oil, until the peppers are softening and the ham is going crispy.
    3. Take them out of the pan, put them in a bowl and set aside.
    4. In a mug or a jug, mix your egg, oregano, paprika and turmeric and whisk together.
    5. In the pan that you fried your peppers and ham tip your egg mix in and roll it around the pan until it covers the base, then tip your ham and peppers on top.
    6. When the omelette is crispy underneath, carefully fold it in half with the ham and peppers inside and place your tomatoes in the pan.
    7. Lift the omelette out of the pan and place on a plate with your tomatoes and potatoes
    8. Cut a cross on you potatoes but not all the way through and place a nob of butter inside, along with some salt and pepper
    9. Serve and enjoy!


    While frying your peppers and ham you could sprinkle over some paprika and also some on your tomatoes! Another spice combination that I tried was Cajun Spice, I thought that this works well to! Please tell me in the comments section if you find any others!
