Chicken, Fennel & Orange

    Tasty chicken dish baked on a bed of fennel with a lovely orange sause

    Ingredients

    • 3 oranges
    • 3 tablespoon mustard
    • 1 tablespoon olive oil
    • 8 chicken thighs
    • 2 fennel bulbs
    • 15gr olives (pitted)
    • 1 tablespoon thyme

    Method

    1. Preheat oven to 190C
    2. Combine zest of 2 oranges, juice of 2.5 oranges and mustard. Mix and marinate the chicken
    3. Halve and core the fennel bulbs. Cut into 1 cm slices. Make a bed on deep baking tray. Place the marinated chicken on top, pour the marinade over. Sprinkle with thyme and spread olives around. Cut remaining 1/2 orange into slices and place over chicken
    4. Bake for 35-40 minutes (until chicken is done). Remove the marinade and boil for 3-4 minutes to thicken a little
    5. Serve
