Pork with peas and leeks

    Pork loin steaks or escalopes are pan fried with leeks and peas in a creamy mustard sauce, a quick dish for everyday and something different.

    • 600 g pork loin steaks or escalopes
    • olive oil
    • 2 leeks, sliced
    • 250g peas
    • 100ml stock
    • 1 to 2 tablespoons mustard
    • 2 tablespoons soured cream
    • 1 lemon, zested and juiced
    • 1 tablespoon minced tarragon

    1. Fry the pork in some olive oil till browned, 2 to 3 minutes on each side. Remove and cut into bite size chunks.
    2. Saute the leeks in the pork juices/olive oil till soft, 10 minutes.
    3. Add the peas and stock and simmer for 2 minutes.
    4. Return the sliced pork with any juices, mustard and soured cream and stir well to coat everything.
    5. Add the lemon juice and zest and tarragon and stir in. Serve hot.
