Tissue box lemon cake

    This is a egg free simple yoghurt lemon cake that you can even bake when you are out of self raising flour. And it has an original twist - it can be easily decorated like a tissue box. Because life is like a box of tissues so grab a tissue.

    Makes: 1 loaf cake

    • 125g butter, softened
    • 200g caster sugar
    • 250g plain flour, sifted
    • 2 lemons, juiced and zested
    • 2 tablespoons warm milk
    • 2 teaspoons bicarb of soda
    • 1 teaspoon cream of tartar
    • 250g natural or Greek yoghurt
    • lemon icing or royal icing to decorate

    1. Preheat the oven to 180 C / Gas 4. Grease a loaf tin or line with greaseproof paper.
    2. In a bowl cream butter and sugar. Add sifted flour. Add lemon juice, zest and milk. Fold bicarb of soda and cream of tartar into the mixture. Fold in Greek yoghurt.
    3. Tip in the mixture in the tin and bake until a tester comes out clean, 25 minutes or more. Remove from the tin.
    4. Let cool, then spread with lemon icing or or royal icing.
    5. After the icing has set, slice in the middle and insert overlapped tissue paper to make it look like a tissue box.
