Bread maker lemon banana cake

    I was looking for a recipe to work using my Tower® Breadmaker and came up with this amalgamation of various bakes to fit the ingredients to hand. Very pleased with result using the 1 hour 33 minutes cake programme. The cake is cooked and beautifully moist with a nice spring in the sponge.

    Makes: 1 cake

    • 100ml oil
    • 100ml milk
    • 100ml plain yogurt
    • 2 eggs
    • 1 very ripe banana
    • 1 lemon, juiced and zested (use only half of the juice)
    • 100g caster sugar
    • 250g self raising flour
    • 1 teaspoon baking powder
    • 2 tablespoons blueberries
    • 1 1/2 tablespoons icing sugar

    1. Add oil, milk, yogurt, eggs, banana, lemon zest and sugar to bread pan.
    2. Combine flour and baking powder and add to the pan.
    3. Place pan in machine and start cake programme.
    4. After about 5 minutes pause and scrape down the corners and sides with flexible spatula to ensure all flour is mixing in. Then add blueberries and continue programme.
    5. Combine lemon juice with icing sugar. When the cycle is finished check whether cake is cooked. Leave in the tin.
    6. Make holes all over the cake and pour mixture on top and leave to soak in cake.
    7. Take cake out by easing the sides with a non-metal spatula and then turn out on a cake rack, taking out the paddle before uprighting.
